Repeater Recipes – Raw Tomato and Cheese ‘Pizza’

Hello Monday.

My sister has been in town this weekend and we’ve had a great time.  My kids have pretty much ignored me, except when they ask me to bring them and Aunt Jenn some food.  That’s all I’m good for when their beloved Aunt is around.  She does take a pass on helping them in the bathroom, so I also get called up for wiping duty.  The rest of the time I’m relegated to another room, which really hasn’t been all that bad.  Yesterday morning the husband and I got to read the entire Sunday paper AND drink our morning beverages while they were still hot as Aunt Jenn played every single board game and dressed each barbie.  Thanks sister!

Insert transition from personal anecdote to raw food recipe now….

I made this recipe again last week, inspired by a big bag of farmer’s market tomatoes that were this.close to being over ripe.  As I said in the original blog post, this does not taste like traditional pizza.  You won’t think you are biting into a big slice of cheesy Pizza Hut pizza (or, my personal favorite, the Baked Potato Pizza from Pizza Luce in Minneapolis), but it is a tasty dish with a crispy cracker-like crust, a really rich tasting tomato sauce and a cheesy sprinkle topping

Raw Tomato Pizza

Original Air Date: October 20, 2010

Flatbread Crust

  • 1/4 c buckwheat, soaked and dehydrated and ground
  • 1.5 c chopped celery
  • 1 Tbsp olive oil
  • 1/4 tsp salt
  • 1/2 c water
  • 1/2 c flax seeds, ground

1. Blend celery, oil, salt and water until smooth.  Add flax meal and mix well.  Add buckwheat powder and blend well.

2. Spread batter onto lined dehydrator tray – it will fill it about halfway

3. Dehydrate for 8 hrs at 104.  Flip and dehydrate another 4 hours at 104.

Raw Tomato Sauce

quite good on its own as a dip or sauce for cooked or raw noodles.

  • 1.5 cups sweet tomatoes – mostly seeded
  • 1 pitted date
  • 1/4 tsp oregano
  • 1/2 tsp fresh rosemary
  • 1/4 c olive oil
  • 1/2 tsp salt
  • 1/4 cup chopped sun-dried tomatoes

Blend all ingredients until smooth

Savory Sprinkle Topping

  • 1/4 c pine nuts, ground
  • 1/4 c nutritional yeast
  • 1/4 tsp salt

Mix together in a food processor until a parm cheese-like powder forms

To Make Pizza: Make all three components and combine.

Pizza with Peanut Sauce and Vegetables

So I’ve already established that I love Peanut Sauce. Love, love, love it.  I took that love to new heights when I tried joining two of my favorite things: peanut sauce and pizza.  It worked so well, I’m thinking of combining some of my other favorites:

  • Chardonnay and Watermelon
  • The Soup and The Dish (RIP The Dish, you are so very missed)
  • Sleep and, well, Sleep
  • Oolong Tea and Dark Chocolate
  • Ryan Reynolds and Me (the husband and I have an ‘you’re allowed to cheat with this one person’ rule.  My person is Ryan Reyonlds.  His is Jennifer Aniston.  I’m thinking we are in for a long, faithful marriage)

Back to the pizza.  Get your head out of the Ryan Reynolds gutter.  On second though, don’t.  Stay there for a bit. When you’re ready to come back, this blog will be waiting…..

Pizza with Peanut Sauce and Veggies

Ingredients:

1 batch pizza dough (I used this one)
1 batch Peanut Sauce
Chopped Veggies – I used carrots, red peppers, yellow peppers, white onion
Garnish Veggies – I used cilantro and green onions

Directions:
1.  Make pizza dough as directed.
2. When dough is ready for baking, top with peanut sauce and chopped vegetables.
3. Bake at 450 for about 10 minutes, or until crust is starting to brown.
4.  Top with garnish vegetables and enjoy!
It was so fresh tasting.  I finished off that whole pizza in one sitting.  I suppose I’ll share it with Ryan Reynolds if he ever comes around.  Along with some watermelon Chardonnay.
