Food Renegade – The Secret Ingredient In Your Orange Juice

I worked closely with several flavor chemists and flavor/fragrance companies during my time in the food industry.  What this article says is in line with common industry practices.  Flavor chemists are very smart, very skilled chemists who can combine isolated chemicals to create eerily familiar flavors.  Do I think they are evil?  Absolutely not.  But, I think that choosing the Mother Nature flavored product (i.e. the actual orange) instead of the ‘naturally flavored’ product (i.e. the orange juice) is wise.

NY Times – Is Sugar Toxic? 

Why oh why can’t someone come out with a study saying that sugar is a health food?  It is my weakness and I’m working on reducing it in my own and my family’s diet.  I can absolutely attest to the addictiveness of sugar.  After a couple of tough days of cutting it way down in my diet, I find that I’m craving it much less than I expected.  However, after a few days of falling of the wagon, I’m wandering around the house like an addict, digging through the pantry to find the kid’s Halloween candy stash.  

 

Now, to lighten the mood, go click on this website.  The language is colorful, but it had me laughing to the point of tears.  Which distracted me from my sugar craving….

Weekend Dump Post

Back in the days that I got paid actual money for my time and efforts (i.e. had a job), we often had big meetings to brainstorm new food products, concepts, marketing strategies, line extensions and the like.  After the brainstorming meeting (often called Ideations – which I think is one of these made-up corporate world words) there would be a re-cap meeting, usually called a Dump Session.  It was a time to (1.) wish we could just go back to our desk and do all the actual work/emailing that hadn’t happened all day because we’d been locked in a conference room ‘ideating’, (2.) eat even more and (3.) get the key team members in the same room to compare notes and key takeaway points*.

* ‘Takeaway Points’ is another one of these phrases thrown around like ‘Ideation’ Go ye forth to a big company interview and work those words into your answers…..  also include ‘cross functional collaboration,’ ‘ margin management,’ and ‘lowest hanging fruit.’  

Now that I get paid in valuable intangible currency, like hoping my children don’t grow up to be ax murderers because they had a mom who stayed home with them, I don’t do too many Ideations**.  Nor do I identify the lowest hanging fruit** for cost saving efforts with my cross functional team** in order to practice responsible margin management.**  But, I can still do Dump Sessions.

** see how I did that?  ps, to any of my food industry friends who read this, we all know that the low hanging fruit is long, long gone.  Heck, the whole fruit tree orchard is picked dry….

Official Dump Session List for the Last Few Days in My Horribly Exciting Life

  1. I got to meet the very sweet Lindsay from Cotter Crunch last week white I was en-route to the Dallas area.  We met at the original Whole Foods, which was almost orgasmic (not the meeting Lindsay part, because that would be weird, I’m referring to the sacred (and overpriced) ground of the flagship Whole Foods store).  Lindsay was kind, funny and earned high marks in my book for not batting an eye (at least that I could see) when my little guy sneezed and sent snot flying out of his nose and down his face.  That, my friends, speaks volumes about her character.  I just hope it didn’t serve as unintended birth control….
  2. I managed to spend less than $20 at the flagship Whole Foods.  If that doesn’t deserve a spot on this list, I don’t know what does.  Self control, people, self-control. That and shopping with a runny nosed 3-year-old who needs to go to the bathroom.
  3. I got to meet up with some friends from my short-lived second job in Ft.Worth at the wonderful Yucatan Taco Stand.  While the job left something to be desired, those two ladies did not.
  4. A delicious lunch with a long time friend at The Spiral Diner, a vegan restaurant, in Ft. Worth featured one of the best salads I’ve had in a long time.  Post coming soon.
  5. My kids got to experience their first trip to Chuck E Cheese.  If they could write, they’d definitely include it on their weekend Dump List.
  6. I got another one of those heavenly tamales at the San Antonio Quarry Farmer’s Market.  Mmmmmm.
  7. I finished my second batch of kombucha and started my third brewing. I’m a fermenting machine I tell you.
  8. I went to an Athletic Interval class at the gym today and I’m pretty sure I pulled a muscle in my abs.  I didn’t even know that was possible, but I don’t think it’s a good sign when your abs are numb/sore immediately following the class and you have to move around for the rest of the afternoon like you’re 9 months pregnant.  Has anyone else pulled an ab muscle?
Okay – I better get to bed and let my poor abs rest.  Holding up my big head is hard enough and then I go and make them do too many full sit-ups with weights.

Quinoa and Chickpea Bake with Mmmm Sauce

I’ve made no secret of my obsession with admiration of Mama Pea at Peas and Thank You.  Picking my favorite recipe from that site would be like picking a favorite child.  Her pumpkin scones, cilantro jalapeno hummus and roasted chickpea tacos are on a steady rotation in my house.  My latest favorite is her Mmmm Sauce.  It is complex, tart, creamy and addictive.  My kids and husband do not like the sauce, which is fine by me, as I can eat the whole recipe in 2-3 days.  It’s my salad dressing some days, a dip for carrots and triscuits other days.

Last week I put it atop a wholesome but rather bland quinoa chickpea bake and it absolutely took the recipe from ho-hum to ‘eat 2 bowls in one sitting’ good.

Quinoa and Chickpea Bake with Mmmm Sauce

Ingredients:

1 batch Mmmm sauce (recipe here)

1.25 c uncooked, rinsed quinoa
3 cups water/vegetable broth/combo of both
1.5 c cooked chickpeas
1 chopped bell pepper (I used a mix of orange and yellow)
1/2 c finely chopped kale
1/2 c chopped zucchini
1/2 c finely chopped carrot
3 cloves garlic, minced
1 Tbsp EVOO
2 Tbsp chopped fresh basil
1 Tbsp chopped fresh rosemary
1 tsp fennel seeds
1 tsp salt
1/2 tsp black pepper

Directions

  1. Make Mmmm sauce
  2. Preheat oven to 400F.
  3. Combine all ingredients in a lightly greased casserole dish and stir well.
  4. Bake, covered, for about 50 minutes, or until quinoa is cooked and liquid is absorbed.  Stir a couple of times during baking.
  5. Remove from oven, cool for a bit and top with Mmmmm sauce.

Have Chickpeas, Will Travel

We spent the last four days with out-of-town family for Easter.  Thursday night the four of us drove to the Dallas area (5.5 hours), where my folks live.  On Friday the husband and kids got back in the car and headed about 3.5  hours away to visit his grandfather.  I stayed behind due to a Saturday morning commitment in Dallas.  My 3 loves drove back on Saturday (another 3.5 hours) early evening, just in time for a church egg hunt and Easter Eve service.  Sunday we had Easter with my parents, sister, brother & sister-in-law in Dallas and then got back in the car and drove the final 5.5 hour leg of our trip to come back to San Antonio.

I’ve got posts coming this week about the trip and Easter (ps, my kids looked pretty cute in their Easter finest, until my little guy drooled tootsie roll all over his white shirt).

I packed up foods on Thursday both for the drive and for me to eat while at my parent’s house.  Can you see the common theme/ingredient?

Hmmm.  Think I like chickpeas a little?  Yep.

And Katie (of Nourishing Flourishing), if you are reading, you have been deemed a culinary genius by my family.  Your peanut butter hummus (here is the link again) was eaten by my mom, dad, sister, sister in law AND mother in law.  I don’t know if my mom has ever had a chickpea cross her lips until this recipe.  That, my friends, is an Easter miracle.  It tastes like a whipped peanut butter-flavored butter.  It is sooo good!   I liked the brownie batter hummus too, but I didn’t think it was in the same league as the peanut butter hummus.

I wouldn’t call these killer.  They were fine, but not a repeater.  Not killer, not stalker,not even peeping tom.  Maybe just Jay-Walker Pumpkin Pancakes.


Grape Jelly Surprise Muffins from The Daily Garnish

Well, applesauce, mangoes, carrots, snap peas, broccoli AND jelly surprise muffins.  I liked the muffins, but the kids were ambivalent.  Apparently my daughter prefers her jelly cold  and not cooked (her words).

I’ve eaten this 3 times in the last week.  It is hitting the spot these days.  I’ve also made the ‘Sicilian’ version. Both are quite good.


Truly Chocolate Pudding from Peas and Thank You

This was good – wonderful texture.  I’d like it better without the cinnamon.  I also think I’ll use a darker cocoa next time.  I used raw cocoa, which I thought made the pudding a bit too mildly chocolate.  I like my chocolate pudding to hit me over the head with chocolate.  That’s the point, right?

How McDonalds Screwed Up Oatmeal – I’ll admit to trying the oatmeal a couple of times.  You give me a coupon for a free product that is reasonably healthy and I’ll almost always use it.  The first time I asked for no brown sugar, assuming it meant plain.  It came out with the ‘cream’ sauce and was too sweet to eat.  Even the kids thought it was too sweet (and this was without the brown sugar).  I ended up eating out the apples and cranberries.  The next time I asked for only oatmeal, hot water and fruit and it came out as just instant oatmeal with fruit.  Much better.

Has anyone tried the McDonald’s oatmeal?

 

Veggie Udon Noodles

Tis the season for quick meals that counter all the sugar highs….

Veggie Udon Noodles from Alisa Cooks.  I added steamed broccoli.  For the kids I kept some noodles and veggies unseasoned, as they don’t like dishes that have too much Tamari or Sesame Oil.

Great recipe and one I’ll be adding to our weeknight rotation.

Fall Quinoa Pilaf – I added a dash of cinnamon.  So good and seasonal.  I made it for our family Thanksgiving.  It was the first time anyone in my extended family had ever seen quinoa.

Pumpkin Gingersnaps. Crazy good and addictive.  I love vegan doughs because I can let the kids eat the dough with no worries. I sent some of these to the kid’s preschool teachers and they have all asked for the recipe.

Cranberry – Blueberry Sauce from Peas and Thank You

I was tempting fate by letting her stir both cranberries and blueberries in a white shirt.
