I Honestly Love You – Ode to Collard Greens

I consider myself to be a very loyal person.  Once you have earned my devotion, it is pretty hard to lose it.  Ask Olivia Newton John.  I became a fan of hers around age 10 and still am today.  Granted I wish she hadn’t had so much work done to her face (not as bad as Meg Ryan, but she is no ‘I’m aging gracefully and beautifully’ Annette Bening).  Still, I was a fan even through her bizarre music years (a’la Soul Kiss) and movie flops (a la Two of a Kind).  ONJ, I heart you.

Kale has been the Olivia of greens to me for a few years.  It is the king of the greens and for good reason.   See this post on the new to me but wonderfully named blog: 365 Days of Kale. Kale, however, has also proven dangerous to me.  For some reason, I tend to get have my worst injuries when I am working with kale.

Enter Collard Greens.  Slowly and unobtrusively they have been winning my affection.  Rightfully so, as collard greens are an excellent source of vitamin C, vitamin K, beta carotene and manganese and a good source of vitamin E and zinc.  It even has 3 g of protein for every 100g of greens.  Not bad, but not as good as kale which has 6g per 100g.  Collard greens deserve some respect and, quite possibly, some devotion.

I find myself buying a bunch/head/whatever the unit is called of kale and collard greens each week of the store and, the last two weeks, have finished off the collard greens first.  Maybe my loyalty to kale is waning, or, maybe I’ve found room in my heart for another green.

I’ve got chills, they’re multiplying.

And I’m losing control.

All the Cool Kids Eat Collard Wraps

After reading Gena’s tutorial on Collard Wraps and realizing I had been wrapping them wrong all this time (oh the horror), I rectified the situation and made a proper Collard Wrap.  I’m glad to finally be legitimate in my wrapping.  It’s like finally sitting at the popular table.

Turns out the secret is in cutting the stem slightly off, not removing it.  Who knew?  Clearly not me.

The kids and I did a picnic lunch last week.  They had pb&j, as collard wraps aren’t exactly their style.  I keep hoping they’ll come around, but am not holding my breath.  I used hummus (store bought/not raw), romaine and red leaf lettuce, cucumbers, red peppers and carrots.

Rolled it all up…. voila!

I also made a dessert wrap with almond butter and banana.

I love wraps for sack lunches, as they travel and keep well.  It’s like a hand held salad – no utensils needed.
