WIAW – Vegetable Love

I’m a bit late in getting this post up as I got served with a mean headache last night.  Which is my disclaimer for the lack of witty and, well, interesting commentary.  

It’s time for yet another What I Ate Wednesday hosted by Jenn at Peas and Crayons.  This month Jenn wants the WIAW bloggers to emphasize vegetables, which is thankfully pretty easy for me.  If she wanted up to emphasize fashion, creative photographs or crafty decor, I’d be up a creek.  Vegetables, however, I’ve got a handle on.

The day started out great.  I made some breakfast for the munchkins:

oatmeal + oranges (alliteration unplanned)

and then packed their lunches.

girl: cucumbers+carrots+red pepper, pita chips, apple sauce, cheese + tortillas

boy: celery, applesauce, cheese puffs, cheese + tortilla, cucumber

I had a cup of tea (unpictured) while driving the girl to school and then came back home and made my breakfast.

steel cut oats + fruit and nuts, green juice

I generally order hot tea at Starbucks and on the days I forget my cup (bad for the environment and I don’t get the $.10 savings), I get even more guilt from the double-cupped teas.  I save the outer cup and use them for to-go cups on days that I’m eating in the car.  Oh, and husband if you are reading this, I most certainly did not eat in our new (to us) car….

I took the boy to preschool and then hightailed it to the gym.  I did my once a week run (which is why I’ll never call myself a runner) and got cleaned up.  Did some grocery shopping while hungry, but managed to not buy anything too bad.  I wisely avoided the Valentine’s Candy aisle.

Lunch was Sunshine Salad (from Peas and Thank You) and Crunchy and Tart Broccoli Salad.

I picked up the girl early from school due to  early release and we used our brother-free hour to get pedicures.

Sigh.  Although she causes me grief (mostly for being so much like me), I love, love, love this little girl.  Oh, and clearly I don’t roll up my pants evenly….

We picked up the boy and came home to play.  I snacked on some Mary’s Gone Crackers and goat cheese.  Yum.

A little headache started and then it wasn’t so little anymore.  I don’t get headaches much, so I am quite the baby when they hit.  Thankfully the kids entertained themselves quite nicely in the backyard.  And by quite nicely I mean that they came in covered in dirt and grass stains.

I got Buddha Bowl fixings ready for dinner and when the husband came home I said every man’s favorite line:

‘Not tonight honey, I have a headache.’

Only I was talking about cooking dinner (but not prepping, as I did chop all the vegetables and make the rice.  yes, I love playing the martyr).  He gallantly took over and did the dinner and bedtime routine with the kids while I laid in bed.  He is a good, good man.

The dinner spread.  I had the Lemon Choibani with Ezekiel 4:9 cereal in the bottom right for dinner, as nothing else sounded good.  The kids like their Buddha Bowls with raw vegetables and the husband generally makes a fried rice-like concoction.

Happily my headache is gone this morning.  I wish you all a happy, healthy Wednesday!

    aww, headaches are no fun. i’ve been sick with a cold/headache all week long so i feel your pain. hope it’s gone soon!

    Glad to hear your headache went away. I love the photo of your little guy in the background of the juice/oatmeal photo. I can just hear him asking, ‘Watchya doin’, Mom?” but then, he’s probably used to seeing you take photos of your food by now. My kids don’t think twice about it. But you should see when their friends come over. :)

    So glad your headache is better. I had a wicked headache yesterday, all day. They are the worst.
    I love your little guy in the back photo, too cute. How fun that you girls got your toes done! The steel cut oats and fruit looks delicious, thanks for tomorrows breakfast idea. :-)

    Mom and daughter pedicures….cute! I got one with my niece last year. The only time I’ll indulge myself is if I say its “for her”. ;)
