Menu Plan Monday at I’m an Organizing Junkie
I’ve seen a few blogs posts weekly menu plans and thought I’d give it a whirl. Here goes:
Monday
lunch: Fall Quinoa with Roasted Squash and Onions (recipe coming soon)
dinner: I’ve got a monthly meeting at church and it’s tradition for the husband to make the kids spaghetti. They usually get dessert too – he’s a sucker. :)
Tuesday
lunch: Lettuce Wraps with Chickpea and Greek Yogurt Salad
dinner: Lentil & Rice bake, bread machine bread
Wednesday
lunch: More lettuce wraps with chickpea and greek yogurt salad.
dinner: Split Pea Soup (from the freezer), Grilled Cheese Sandwiches with the leftover bread from Tuesday
Thursday
lunch: Black Bean Soup with Caramelized Onions (recipe coming soon) – from the freezer
dinner: Out to eat. My latest favorite restaurant, Green, has a buy-one-get-one-free coupon this week and I’m all over it.
Friday
lunch: leftovers
dinner: Vegetable Pot Pie (one of our Friday standards for movie night)
Anything exciting on your menu for the week?






So I always freeze soup in glass jars too, but never thought to use old canning jars. Great idea!
That Black Bean soup sounds great! I am looking forward to huge salads this week – I’ve got tons of great toppings!
I made our menu for the week last night and went shopping this morning. Nothing fancy for us, but it’s nice to have it all planned out
Your Monday motivation is making me feel like a total slacker. I did absolutely nothing this weekend to prepare for the week. I had a good excuse, but still. That is not going to put dinner on the table. Your meals look fantastic–can I come over for lunch (and stay for dinner)?
Um, you had a birthday. Which absolves you of at least 3 days of motivation. At least 3.
You have a standing open invitation to come for any meal. Just don’t mind the sunflower seeds, pistachio shells and cheerios imbedded in the carpet, nor that my 3 year old is very rarely fully dressed.
I’d feel right at home then!
I’m planning on a big pot of chipotle black bean soup tonight . . . yum! And cornbread.
Sounds fantastic! I love chipotle, but my husband isn’t as big of a fan. Cornbread, however, is a whole family pleaser.
I can’t wait to see your recipe for the black bean soup. It looks amazing and we love soup this time of year. Also, hooray for a great deal at your favorite restaurant!
Hey, you never have “left overs”. They are called “PLANNED overs”!!!
Our plan to get a homemade dinner on the table in less than 30 minutes is menu planning for the entire MONTH! I started this in November, planning for 3 weeks, taking a weekend to do most of the cooking/freezing, then enjoying the freedom of having it all done! I continued to “practice” in December (some recipes work better for this than others) and I’m happy to report that I did 4 weeks of menu planning and cooking right before I headed back to work and it’s working awesome! My husband helps and he’s really getting into it and it’s one less thing I have to worry about with juggling daycare drop-off and a new job.
