Sometimes during November and December I need a break from baked goods with cinnamon, pumpkin, ginger, apples, nutmeg and/or cloves. Sometimes I also need a break from laundry, whining and stepping on legos, but that’s not as easy to remedy.
Don’t get me wrong, I love fall/winter flavors (proof: pumpkin bread, cinnamon sugar donuts, pumpkin chocolate chip energy bars), but when you are all cinnamon-ed out, give these a try. You could also make in muffin form. No, blueberries aren’t in season, but frozen blueberries are available year-round. In order to keep the blueberries from dying the batter, I placed them in each donut by hand after I had spread the batter in the pan.
Lemon Blueberry Donuts
- 1 cup whole wheat flour
- 1 cup white flour
- 1/2 cup sugar
- 1.5 tsp baking powder
- 2 tsp grated lemon zest
- 0.5 tsp salt
- 3/4 cup buttermilk
- 2 eggs
- 1/4 cup honey
- 2 tsp vanilla
- 2 Tbsp melted butter
- 1/2 cup blueberries, fresh or frozen (more to taste)
Lemon Sugar Glaze (stir until smooth)
- 1 c powdered sugar
- 1 Tbsp lemon juice
Tart, tender and not a cinnamon clove or pumpkin can in sight….

but the donuts look and sound fabulous! Blueberry and lemon is just an amazing flavor combination! Delicious!
Now I want Santa to bring me a donut pan . . . think he takes last-minute requests??

I totally know what you mean about needing a break from cinnamon and cloves and xmas-y spices. I am the same way, even tough I love all those flavours. Sometimes I just need something different and fresh.
What a refreshing change of pace–a little taste of spring amidst all the nutmeg. For some reason doughnuts are way more fun than muffins, probably because they just sound more decadent and…naughty even? I’d way rather eat lemon and blueberry flavors right now than gingerbread or peppermint flavors.
My husband turned around, saw this pic and said “is this the same blog that you made the pumpkin scones off of. Make these too.”
So, we’ll be having these in muffin form, bc our poor college kid / fairly newlywed selves can’t afford to buy a donut pan, and no one on craigslist is selling one, haha.
Add a donut pan to your Christmas list! Really a muffin pan would work just fine. Somehow shaping them like donuts makes my kids like them so much more.
