Maple Cinnamon Granola with Nuts, Raisins and Cranberries

In honor of the greatest Thanksgiving TV episode ever…..

Maple Syrup?  Good.

Granola?  Good.

Pecans and Almonds?  Good.

Raisins and Cranberries?  Good.

What’s not to like?

Anyone know what show I’m referring to?  Think “I’ll be there for you…”

I made this recipe last week and it was a universal hit in our little family of four.  Finding one recipe that pleases all of us is rare.  I call it a Thanksgiving Miracle!

Maple Cinnamon Granola with Nuts, Raisins and Cranberries

  • 4 cups rolled oats
  • 2 cups crispy brown rice cereal (I used the new Brown Rice Kellogg Rice Krispies)
  • 1 cup sliced almonds
  • 3/4 cup shredded dried unsweetened coconut
  • 3/4 cup chopped pecans
  • 1/2 cup raisins
  • 1/2 cup dried cranberries
  • 1 tablespoon + 1 teaspoon ground cinnamon
  • 3/4 cup canola oil
  • 3/4 cup maple syrup
  • 1 teaspoon vanilla

Preheat oven to 250 degrees.

In large bowl, mix together all dry ingredients.  In a separate bowl, whisk together oil, syrup, and vanilla.  Pour wet mixture over dry and stir to coat.

Place in a 9×13 glass baking dish.  Push down any raisins or cranberries that are on top to prevent drying out.

Bake for 1 hour, or until golden.  Your house will smell so very good for the last 15 minutes of the baking time.

Remove from oven and let cool completely.

Store in airtight containers.

    Omg, thank you for including that clip. I miss that show too. The granola sounds delicious. We are huge granola fans around here, in fact, I make it on a weekly basis. I will have to try your recipe. I had no idea Rice Krispies made a brown rice version–yay! Hopefully it doesn’t “taste like feet!” :)

    OMG–I *LOVE* that episode of Friends! It is totally my favorite one…I swear I pee my pants laughing every time I see the reruns. Love that show :-)
