Pumpkin Chocolate Chip Energy Bars

Look – I used a photo prop!  It may be the one and only time I do, so please, look again….

I like to have bars on hand to grab when I’m running out the door.  Or just have the munchies.  Both of which happen quite often.  I combined a few recipes to come up with these and they’ve been a constant presence in my kitchen for a few weeks.  I wish I could say they don’t leave crumbs in your car, but, well, that would be a lie.  

Pumpkin Chocolate Chip Energy Bars

  • 3 Tbsp ground flaxseeds
  • 1/4 c water
  • 2 c dry rolled oats
  • 1/2 c whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/3 c sugar
  • 1/3 c chocolate chips
  • 1/4 c maple syrup
  • 1/4 c almond butter
  • 1/3 c pumpkin puree (could use applesauce)
1. Preheat oven to 375F
2.  Mix flaxseeds and water in a small bowl, set aside.
3.  Mix dry ingredients (oats-chocolate chips) in a large bowl.
4.  Mix wet ingredients in a small bowl (maple syrup – pumpkin).  Stir in flax/water mixture.
5. Combine wet and dry ingredients and mix well.
6.  Pour into a greased 8×8 pan and bake 15 minutes, or until set.
7.  Let cool completely before slicing into bars. Make about 12 bars (depending on how you cut).

    Yum! I have to laugh at the crumbs in the car part! I should take a picture of my car, it’s embarrassing how many crumbs I have on the seats and floors…

    These would have been delicious as just pumpkin energy bars or just chocolate chip energy bars, but you had to go and put the two together to make energy bar perfection! YUM! Love the photo props too! (And I too went back and looked at them again.)

    Hi Michelle,
    Made the bars this weekend and shared them in my cycling class this morning and they were a HUGE hit! They are awesome! I used Target’s Triple Nut Butter in place of the almond butter and I used mini chocolate chips. Thanks for sharing!

    What could I substitute for the flax? I have very severe allergy to this.

      If you can eat eggs, I’d try adding one egg to the recipe in place of the flax seed. If not, then maybe a store-bought egg replacer. I haven’t tried any of them, but most folks with egg allergies are pretty well versed in egg substitutions
