I’m really enjoying Living Raw Food by Sarma Melngailis.

Many of the recipes are out of scope of my ability, budget and desire, but they are extremely creative and clever. A few of the more simple recipes are making their way into my recipe book, one of them being her Chocolate Chia Pudding. I had all the ingredients and the only equipment needed is a spoon, so I had that covered. I made it today and had the pudding for an afternoon snack.
Chia, a la Chia Pets, is a rock-star ingredient for the Raw Food crowd. It’s really fun ingredient to use – watching it form a gel takes me back to my Food Science grad school days in Food Ingredients course. In that course, we were using much different gel-forming ingredients like agar, carageenan and alginates. Not exactly ingredients that are as natural or in it’s natural form as a Chia Seed.
My version of the recipe….
Mexican Chocolate Chia Pudding
- 1 c almond milk
- 4 Tbsp Chia seeds
- T Tbsp agave nectar
- 3 tsp cocoa
- dash of cinnamon
- 1/4 -1/2 tsp vanilla
Add all ingredients and stir until cocoa is dissolved into the mixture. Chill for 30 min – 1 hour (or longer).
